about burr size, heat and retention

People keep asking us about those 32mm burrs, and we keep explaining: "Size doesn`t matter, it`s all a question of efficiency." No need to tell that they still doubt it. They need proof, ergo an etzMAX!
Our target - and it is not just our slogan - has always been to reduce EVERYTHING to the maximum. Add as much as necessary but as little as possible! So we started at the bottom and took it from there, added wherever but never more than necessary, thus coming up with a 32mm-burr that isn`t just doing the job but doing it in a most efficient way.
The smaller the burr, the smaller the grinding chamber, the lower the retention. We have already raved about this. It applies to friction as well though: the smaller the burrs, the lesser friction, the lesser heat .. another fact!! Heat is a result of friction, and friction is the result of inefficient burrs compressing and squeezing the coffee beans rather than cutting them.
